On Monday I roasted a chicken. I bought a 7# whole chicken, seasoned it with whatever seasonings sounded good, put it in an oven bag popped it in at 350 for about 3 1/2 hours and it was fall apart yummy. My SIL and her hubby came over for dinner, we had stove top and brown sugar carrots with the chicken.
On Tuesday I shredded the leftovers and made BBQ sandwiches. I took the L.O. chicken slathered it in BBQ sauce baked it at 350 for 20 minutes, put it over hogie rolls added a little mozzarella cheese on top, had baked lays, cottage cheese and baby carrots with the sandwiches.
Tonight we had BBQ chicken pizza. I bought a pre-made crust, added a very thin layer of BBQ sauce, cheese, L.O. BBQ chicken, onion, green bell pepper, and a tiny bit more cheese, baked at 400 until the cheese was melted on top. I am full. Not to mention thrilled that I took 1 chicken and made it last until mid week. Whenever I can make any one item stretch to make several meals I feel like I make my Mom very proud.
Mom, even though you think I learned very little from you in the kitchen (I was busy nipping "taste tests") I did learn the important things.
"Momma can take a Thanksgiving turkey and make it last until Easter!"
