Brinner Egg Bake

This is a tweaked version of a recipe I had tried. Here is how it goes:

INGREDIENTS:
1/2 breakfast sausage (I used hot)
3 gold potatoes (I used the smallest ones) cubed
3 tablespoons of butter or you could use olive oil
2 scallions
1 roma tomatoe
6 eggs
2 "glug glugs" of milk
3 shakes of hot sauce
Handful of Cheese
Salt and Pepper to taste

Preheat oven to 325. Peel and cube potatoes small. Heat a pan to medium high with butter and fry potatoes til soft, and in a seperate pan brown sausage. When both are finish put in a pan together. Mix together all the rest of the ingredients...all of them. When mixed well pour over sausage and potatoes. Bake for 15 minutes and serve!

I smothered mine in salsa and fat free sour cream. I would either do this in a little lasagna pan or our teflon pan had a metal handle....wouldn't want you to ruin the plastic handles!
